In my attempt to eat more plant based meals, I’m discovering how versatile chickpeas are. I’ve always loved them in salads or pasta salads, and who doesn’t love hummus? But I’ve realized they are good for so much more. Plus they pack a protein punch! So today I’m sharing some of my favorite chickpea recipes from around the web. Cranberry Walnut Chickpea Salad Sandwich
I have a hard time with lunches, since I eat gluten free. I don’t buy gluten free bread very often because it’s so expensive, and salads every day gets old. This is a great vegan alternative to chicken salad and tastes AMAZING! Sometimes I put it on gluten free bread or amake it as a lettuce wrap. Get it here.
